Easy Quesadillas in 10 Minutes!

There are days (and mostly nights!) that my husband and I crave for Mexican food, but we have no problem with that even if it's in the middle of the night. 

Let me share with you our easy Quesadilla recipe that you can prepare in less than 10 minutes. Even our kid loves this snack!

You will need:

  • 1 pack of Flour Tortillas


  • Tomatoes (I used diced tomatoes in bottles, bought from the grocery)

  • Chopped onions

  • Grated cheese

How to do it:

1. Heat pan to medium high heat, take one tortilla and place it in the pan. Flip the tortilla every 10-15 seconds, until you see both sides cooked or a bit toasted.


2. Then, spread your desired amount of fillings on one side. I love to put a generous pack of everything!


3. Keep flipping the tortilla until it gets browned or has toasted depending on your preference, and when the cheese has melted. 

Serve warm and enjoy!




P.S. You can also add cooked chicken or bacon strips, and add more vegetables like bell peppers, olives, etc. to have a more pleasurable quesadilla snack with your loved ones!

American Loaf Bread

Thank you God for your never ending blessings! 

Let me share with you this simple gift we received from one of our neighbors. Simple, yet something that we should not take for granted and always be thankful for. Thank you, thank you, and thank you!

We live beside the Franciscan Immaculatine Sisters' Convent, and they also run a school for Kindergarten students. It's been 27 years and the nuns/sisters here have always been very nice to us. They also include our family in their prayers when we ask for prayer requests.

Today they gave us a huge loaf of American Bread. They said this is in return for all the vegetables they got for free (from my mother's garden)!






I've always wanted to bake something like this, but never had the time.

I hope you can feel the good vibes I'm feeling right now! Ain't it the best when everyone is generous and kind to each other?

Desserts at Slice (High Street)

After our sumptuous meal at Heroes, we decided to visit Slice at High Street for some desserts. 

Wahvu just can't get enough of these sweets from Slice, sold only at Heroes.


A visit to Slice is always on our list whenever we go south to see relatives. We always make sure to drop by Bonifacio High Street on our way home and get a box of muffins or cupcakes for Wahvu's school baon.

From a kiosk (while Slice was still being constructed) to a restaurant, we've always enjoyed our visit here.

Since we were still stuffed with our dinner, we had a hard time choosing on what to eat. Everything on the menu is yummy, aargh! Thanks to our server Lanne (hope she gets to read this), she was very helpful and was more than happy to suggest the best desserts for us. 

Our friend Alda and I went for the Cupcake Banana Split. Oh, it's just so heavenly delicious!

Hubby and Wahvu got Caramel Yema Chiffon Cake, Rocky Road Blended, and Melon Banana Splash Slushee.

Guess who finished all of this? ☺ Ang sarap!

 I tried it and it's so refreshing with just the  right sweetness.

Corned Beef Sinigang

It's a rainy Thursday again and Wahvu and I spent the whole afternoon electric fan-less, with just the windows opened and curtains drawn. A perfect bed weather again! 

But just as when it's already dinner time, Wahvu suddenly craved for Sinigang (Sour Broth). Oh no, how I am going to run to the grocery at the last minute?

I scoured the pantry for ingredients that I can use and luckily I have it in stock!

So tonight I am going to cook Corned Beef Sinigang for Wahvu, it's an old recipe I learned from Chef Tristan Encarnacion many years ago. So my guess is you might be familiar with this recipe already.

Ingredients:

String beans
Pechay (or any leafy vegetable of your choice)
Onions (I used 3 large sizes, it's Wahvu's favorite)
Tomatoes (Optional)
Corned Beef (I use Swift Corned Beef small pouches)

Knorr Sinigang Recipe Mix (any variant will do - Sampalok, Miso, or Gabi)

How to do it:
First, sauté the onions and tomatoes.

Add the corned beef.

Add water, then the Sinigang Mix. 

When it boils, I let it simmer for 5-10 minutes in medium heat.

Then I add the vegetables. Boil, and then remove from heat.

 Serve warm with rice.

Cafe Via Mare

One of the best things I look forward to when Ate or Kuya comes home from abroad is our dining experience in a Filipino restaurant. Surely they must have missed everybody, and all these delicious Pinoy dishes while they were away, so when there's a chance for our get-together like this I make it a point not to miss it! 

Last night we went to Cafe Via Mare in Eastwood to have my sister-in-law's post birthday celebration, and also to be with Kuya who just arrived a few days ago. ☺


We were seated outside at the veranda area, a good seat if you like people watching while waiting for your food to be served. Hehe. Actually saw some local celebrities and models pass by. Don't sit here if you don't like cigarette smoke, for this is also a smoking area.



Take note of the "Fresh Oysters Available Here" and "We Deliver twoanyone 2121212" signages.

Food is served in 15 to 20 minutes, so the kids kept themselves busy with some cool tattoos from the October issue of K-zone magazine. Nice di ba?

First to be served is Dinuguan, the favorite dish of Nanay. I think it's shredded pork, but I'm not so sure as I didn't eat much of it. I tasted the sauce and perfect ang pagka-asim nito!

Next is Laswa, a vegetable broth with shrimps, and this really brought back memories of Tatay who used to cook dishes like this. The combination of okra, eggplant and malunggay is superb. The kids thought it's Sinigang na Hipon at first but they nevertheless liked it anyway.

Our meal with Kuya will not be complete without his favorite Crispy Pata.  I love the mango salad on the side!

The Crab Omelette with Vegetable Rolls is my favorite last night. I think I was the one who ate most of it! But I think the veggie rolls are too oily for me.

Spicy Boneless Tuyo in Olive Oil with Egg on the side. Good!

Last to be served is the Sinigang Hipon. Too bad my shot of the dish can't give justice to how great the broth tastes! Comfort food it is!

And now for the desserts:



Guinomis. The coconut milk mixed with pinipig, sago, gulaman, sugary syrup and crushed ice is a refreshing alternative to Halo Halo.

Halo Halo with Ube Ice Cream. I ate too much of it, and my throat hurts afterwards!

Mais con Hielo.

Wahvu's never ending Mango Shake. I'm not surprised he wanted to order a tall glass again, for when I tasted it, it's just so heavenly! Yummy.

Puto Bumbong with Niyog and Muscovado. I was too stuffed for this last night and now I regret not even tasting it. But they say it's very, very good.

I will definitely go back here anytime with my family again. Good service and great food!
